Warm Christmassy Fruit Salad

Ingredients

 

  • A couple of large unwaxed oranges sliced into rings
  • Zest of 2 oranges
  • A few clementines in segments
  • A couple of sliced apples OR dried apple rings
  • A couple of handfuls of dried apricots
  • A handful of dried figs
  • A handful of large, juicy raisins
  • A handful of nuts – try pistachios, pine nuts, halved walnuts or blanched almonds
  • A couple of sticks of cinnamon
  • 1 star anise
  • 2-4 cloves
  • 2-3 cardamon pods
  • Pure red grape juice (or red wine if you wish to have an alcoholic version)

 

Step 1


Thoroughly wash the unwaxed oranges and then zest them using a grater

Step 2


Place ALL the ingredients – including the grape juice or wine - in a heavy-based saucepan such as a Le Creuset pot.

Step 3


Bring it up to a simmer with the lid on and allow to gentle cook. Make sure that you do not overcook the fruit as it will become a pulp. You want everything to retain it’s shape

Step 4


This is best served warmed up, the day after it is cooked, so as to allow time for the flavours to develop.

Busy Mum Tip:


Use a couple of mulled wine sachets instead of the spices, if you are very short of time – it will still taste lovely!
