Pretty Healthy Chocolate "Fudge"

As is often the case, I like things that are frankly far from healthy - fudge is one of those things! Having said that, it's really rare that I buy it because it really is like eating solid sugar and that's not a very nice thought! So this is something like chocolate fudge, is full of good ingredients and tastes great. All 3 of my boys love it and when i make it, the squares mysteriously disappear in the night...

 

Ingredients

  • 200g of dates soaked overnight or all day (or more)
  • 2 tablespoons of arrow root
  • 3 tablespoons of cacao powder or cocoa powder
  • 1 tabelspoon of coconut palm sugar (optional)
  • 75g of 85% cocoa solids chocolate, melted

Step 1

drain the dates and blend them with a hand blender

 

Step 2

Mix in the arrow root, cacao poder and coconut palm sugar

 

Step 3

Cook this mix in a heavy based saucepan util really very thick and "gloopy". Kee stirring!

 

Step 4

Scrape the mix onto some baking paper in a tin and shape into a square patty. I then folder the baking paper over so that i have a little square parcel.

 

Step 5

Allow the parcel to cool completely in the fridge or freezer for speed

 

Step 6

When completely cold, pour the melted chocolate in a layer over the top ofyour square of date mix, ensuring that the edges of the baking paper "contain" the chocolate.

 

Step 7

Pop back into the freezer for a short while until the chocolate is partially set, before taking it out and usign a sharp knife to mark out fudge-sized squares. now put back into the freezer until it has completely frozen.

 

Step 8

Once frozen, you will be able to cut the fudge up into squares. Keep these squares in the freezer and get them out as and when you want to eat them. The date part remains soft but set, even when frozen and the chocolate adds a crunch!
