Ferrero RAWcher Cups (well... almost raw)

The ingredients

The dough

  • 1 cup dates
  • 1 cup roasted hazelnuts
  • 1/2 cup unroasted cacao powder
  • 2 tbs melted coconut oil
  • pinch or 2 of himalayan salt

The gooey filling

  • 1/2 cup roasted hazelnuts
  • 1 tablespoon coconut blossom nectar
  • 2 tablespoons unroasted cacao powder
  • 1/2 tablespoon of water

The topping

  • Very dark chocolate
  • chopped hazelnuts
  • cocoa nibs, dried petals... whatever makes you smile! 

Step 1

Blend all the dough ingredients in a powerful blender until you get a ball of dough

Step 2

Blend all the gooey filling ingredients until you get a gooey paste

Step 3

Divide the dough into 12 balls and shape into little cups

Step 4

Fill the cups with the gooey paste and top with a single hazelnut

Step 5

Gently heat the dark chocolate (I use Real Food Source 67% sweetened with coconut palm sugar) over a bain marie and spoon over the cups allowign the chocolate to dribble down the sides. Then top however you wish: I used chopped hazelnuts, cocoa nibs and dried petals. 

Keep these delectable cups refridgerated in a Tupperware although they are best noshed at room temperature!  They should last well unless, like me, you gobble them all up!
