Fudgy Aquafaba Brownies

 

All three of my "boys"are home at the moment and it's no exaggeration to say that keeping them fed is a mamouth task! In general, I mainly make raw puds but the truth is, that given a choice, the boys prefer a baked treat. So yesterday I was playing around with the wonderful thing that is aquafaba (chickpea water) and made these super-quick and easy, squidgy vegan brownies.

They tickquite a few "free from" and "healthier" boxes too (although the boys didn't notice that!): 

  • gluten free
  • dairy free
  • refined sugar free
  • naturally yummy

Mix the following dry ingredients in a big bowl:

  • 300g ground almonds
  • 50g cacao powder
  • 125g coconut palm sugar

Melt together the following over a bain marie:

  • 70g dark chocolate. I used Real Food Source 67% chocolate drops sweetened with coconut palm sugar
  • 30g cacao mass
  • 100g coconut oil

Whisk 200g aquafaba (just about any bean water works btw - I have tried kidney bean water, flageolets water and a few others I can't remember) for 3-4 minutes until it looks like well-whisked egg whites.

Mix melted and dry ingredients together and then fold in the whisked aquafaba.

Bake at 180°C for about 25 minutes or until cooked on the outside and squidgy on the inside. Let me know how you get on if you give it a go! My boys loved them as did my 85 year old parents - so there's a good spectrum of age testers there!
